Provencal dishes.
Daube de boeuf.
to distinguished their prized beef stew from Boeuf Bourguignoon, chefs in Provence make a point of not marinating the meat instead cooking it very slowly in tannic red wine that is very often flavored with orange zest. In Camargue the red meat is often Bull's meat while the Avignon flavors lamb. In Nice give a try to the ravioli a la Daube.

La Fougasse.
The Provencal answer to Italian Foccacia, this soft flatbread is distinguished by holes that gives the appearance of a lacy leaf. It can be made savory-flavored with olives, anchovies, bacon, cheese or anything else the baker has on hands - or sweet enriched with olive oil and dusting with icing sugar. In Menton, try the sugary fougasse Mentonaise.

Dishes from Provence.
La Bourride; this poached fish dish owes its anis kick to pastis and its garlic punch to aioli. the name comes from the Provencal bourrido which translate as boiled. Monkfish -known as baudroie in Provence and lotte in the rest of France.

Soupe au Pistou.
Provencal's answer to Pesto, Pistou consists of the simplest ingredients- garlic, olive oil,fresh basil and parmesan- ideally pounted together by hand in a stone mortar with an olivewood pestle. A kind of French minestrone made with green beans, white beans, potatoes and zucchini.

Tian de legumes.

A Tian is a beautiful earthenware dish & one of many vegetable gratins that might be cooked in it. The Tian makes a complete meal of seasonal vegetables, eggs and a little cheese. Eggplant and tomato are best bets in summer & swiss chard is a favorite ingredient in the winter.

Dishes in Provence that you have to try.
Aioli. Mayonnaise with helpings of garlic and also a complete recipe of salt cod, potatoes, hard boiled eggs and vegetables. Aioli is always all over Provence.

Bouillabaisse. Fish stew made with the parts of a fish that nobody wanted. This famous fish stew consists of four to five kinds of fish ( monkfish,red scorpion fish, sea robin, conger eel and mullet. The stew is simmered in a stock of onions, tomatoes, garlic & olive oil as well as saffron which gives it the golden color. broth is served first with croutons and rouille, a creamy garlic sauce that you spoon in to suit your taste.
