It’s reminiscent of the old-school pies that were made at home back in the day. With a very thin layer of mozzarella UNDERNEATH the abundant extra-virgin olive oily-tomato sauce deliciousness, the cheese factor is subtle and understated, but just the right amount to add a certain creaminess to the experience. A lot of hearts were broken when Calandras Cheese closed earlier if this year after having been open since the 1930s. The very good news is a new business opened in its place that is doing the very same things. I checked out there freshly made ricotta and it’s every bit as good. Plus they also had buffalo milk ricotta imported from Campania, Italy that was spectacular. Go visit Pace’s Italian Market @pacesitalianmarket and welcome them to the neighborhood!

Here’s one of the best things you’ll discover on an Arthur Avenue food tour — scamorza. It’s a first cousin of mozzarella though the process of making it is slightly different. Instead of being sold fresh, it’s hung up to dry in the walk-in refrigerator for about two weeks where it will develop a natural casing. The packaged “mozzarella” you find in grocery stores is actually scamorza, but instead of a natural rind, it’s shrink wrapped in plastic. Not good. If you’re making grilled cheese, you want to use scamorza. If you’re making pizza in a regular home oven, you definitely need scamorza because fresh mozzarella will be too watery. Here in Bronx Little Italy you can ask the deli guys to slice their beautiful house-made scamorza for you just like this. The best! ⁣

Allow us to to reintroduce ourselves! We’re Christian and Danielle, the husband-and-wife founders of Arthur Avenue Food Tours. Ours is an extension of a family business that began in 1918. Back then, Danielle’s great-grandparents Albino & Grazia opened a baccalà store on Arthur Avenue. The entire family lived upstairs above the shop.

After World War II, meat was becoming more common on American dinner tables. Albino & Grazia’s sons became butchers and transformed the baccalà store into a butcher shop. There were over 30 butcher shops in Bronx Little Italy back then, but Oteri’s was chosen as the set for a movie called “Marty” starring Ernest Borgnine. The movie about a lonely Italian American butcher’s longing for love became a huge hit won the Academy Award for Best Picture.

Decades later, Oteri Brothers was sold to the DeLuca family and it re-opened as Vincent’s Meat Market, still thriving today. Arthur Avenue Food Tours was born from so many people asking Danielle and Christian for their recommendations for where to find the best bread, cannoli, mozzarella, pasta, and salumi in Bronx Little Italy
