A great base to explore South Central Spain is Úbeda. The "Gate to Andalusia" where a sea of ​​olive trees welcomed us to villages filled with history.

In 2003, UNESCO declared Úbeda a World Heritage Site.

Cerca de Úbeda la grande, cuyos cerros nadie verá, me iba siguiendo la luna sobre el olivar" - from Antonio Machado's song about Úbeda. Translation: Nearby the grand city of Úbeda, whose hills no one will see, I was following the moon through the olive grove.

One of the important architectural sites is the beautiful chapel located in the Plaza Vázquez de Molina square, which is also the location of the second Parador hotel in Spain within a 16th century palace. I've heard Úbeda sited as the greatest Renaissance architecture ensemble in Spain and one of the most important in Europe.

Úbeda has retained a large part of its historic fabric. The old walled town maintains the overall character of traditional housing on very narrow streets.

I recommend an afternoon in Córdoba, Spain.

Córdoba, is a great example of a religious vortex, where three of the West's major religions: Islam, Christianity, and Judaism have intertwined histories.

The major attraction within the walls of the old city is the duel-faith "Mezquita-Cathedral." There is also a still vibrent Jewish community with Sephardic Temples nestled in the narrow old city streets. (This Jewish Community is noted as the birthplace of Maimonides, one of the great Jewish scholars.)

Córdoba started with a Visigoth Basilica in the 6th Century. Then the Muslims came and started building Mosques. The Mezquita was used as a Mosque from its construction in 8th Century until the Christian conquest of Córdoba in 12th Century. It has been a functioning Church since then, claiming to have never missed a day of Holy Mass.

The Mezquita's spacious interior created by hundreds of arches is recognizably Islamic. The Cathedral, in the center of the building, with its soaring "Transept," ornately gold and silver decorated pulpit, and finely detailed choir stalls are typically Christian. The seamless merging of the two religions into one space is unique and a testament to our shared goal of spiritual connections.

While we were there, the light through a stained glass window illuminated a statue of Jesus as to to remind everyone that spirituality can shine on anyone that is in the right place at the right time. They just have to take the time to pay attention.

In Madrid we ate at Sobrino de Botín. Botin is not just the oldest restaurant in Madrid - according to Guinness World Records, it is the oldest restaurant on earth, opened in 1725.

Apparently Hemingway was a regular and wrote about it in The Sun Also Rises. Also, apparently, Goya, Spain’s most famous artist, once worked here as a dishwasher.

The menu is mostly unchanged, the showpiece being the original cast-iron, wood-fired oven for roasting house specialties, whole suckling pig and baby lamb.

I had the sucking pig and it was perfectly roasted with a crunchy exterior and tender interior.

Eating at Botin is both an exercise in traditional Castilian fare and a glimpse into the soul of Spain itself.

Lake Tekapo, New Zealand

Lake Tekapo is a great to visit because of it location and access to some of the best night views.

Tekapo is part of a UNESCO Dark Sky Reserve, making it the perfect spot for spiritual connections.

Lake Tekapo is about three hours drive south-west of Christchurch in the Mackenzie Basin.

The township faces north across the remarkable turquoise coloured lake to the mountainous drama of the Southern Alps.

Lake Tekapo gets its intense milky-turquoise colour from the fine rock-flour (ground by glaciers) which is suspended in the water.

A must stop is the iconic Church of the Good Shepherd.

It's small size is perfect, being offset by the vastness of the landscape and the clear night sky.

Stonehenge at the Summer Equinox. (Actually, I photoshoped the sun in.) I recommend a visit to Stonehenge. It's not too far from London and it only takes an hour or so to walk the whole site. You can take a tour, which will get you through any lines. But, we drove. There is a lot parking and we were not on the Tour schedule.

Kangaroo experience - Blue Mountains, Sydney

A 1 day tour from Sydney to the Blue Mountains can be a good thing to do if you have the time.
It does take all day.
If you want to see Kangaroos you need to check with the tour operators to see if it is on their itinerary.

Things to Do in New Zealand

Milford Sound

Two ways to get there. From Queenstown or from Te Anau.

We chose to stay in Te Anau because it was only a 2 hour very scenic drive. Whereas from Queenstown, the Milford Sound is a 4 hour drive though not so constantly scenic (though recognize that this part of New Zealand is very cool almost everywhere.) If you go to Milford sound from Queenstown you have to leave at 8 am and don't get back until 6. If you go from Te Anau you leave at 10 am and get back 4. That makes the day a lot less rushed.

The 4 best places to photograph the Sydney Opera House are:
1. Milsons Point
2. Cambells Cove
3. Mrs. Macquaries Point
4. The Sydney Harbor Bridge
