If you guessed Limburger to yesterday's trivia question you are right! This is the cheese "that Nose no equal." The cheese is especially known for its strong smell. In 1853, German immigrant Peter Schwartz first began Limburger cheese production in Rodman, NY. Throughout the rest of century Jefferson County was home to 40 Limburger cheese factories. Traditionally enjoyed on Rye bread with slices of raw onion.

This translates into 40 gallons of sap to produce 1 gallon of syrup. This estimate is dependent on the sugar content of your sap. Really makes you consider the time and effort put in by so many producers in our area and brings a whole new appreciation to it.

(ii) Grade A amber color and rich taste maple syrup has a uniform amber color, a rich or full-bodied taste, and a light transmittance of 50 percent - 74.9 percent Tc.
(iii) Grade A dark color and robust taste maple syrup has a uniform dark color, a robust or strong taste, and a light transmittance of 25 percent - 49.9 percent Tc.
(iv) Grade A very dark and strong taste maple syrup has a uniform very dark color, a very strong taste, and a light transmittance of less than 25 percent Tc.

Currently Canada produces 71% of the world’s pure maple syrup with 91% originating from within Quebec. In 1958, maple syrup producers came up with a private organization to unite them and support their interest. The organization is known as the Federation of Quebec Syrup Producers. The federation is involved in marketing and maintaining a strategic reserve for maple syrup. Maple syrup production in Quebec is responsible for over 12,000 full-time jobs.Maple syrup production also contributes an average annual tax revenue of $186 million. Here in NY we may not produce as much, but definitely put our unique spin on this time honored tradition in the North Country. So get out there this month and celebrate with us for Maple Month. The rose has been around for about 35 million years and grows naturally throughout North America. Roses are red, pink, white, or yellow and can have a wonderfully rich aroma. The petals and rose hips are edible and have been used in medicines since ancient times. Rose hips are eaten in winter by wild birds and other animals.

If you guessed Thousand Islands Dressing yesterday you are correct! The story goes, in the early 20th century, a fishing guide's wife, Sophie Lalonde, made this as a condiment for her husband's shore dinner. Actress, May Irwin liked it so much she requested the recipe. She in turn, gave it to another Thousand Islands summer visitor George Boldt, who was the owner of the Waldorf Astoria Hotel in New York. Boldt then directed his world famous maitre d', Oscar of the Waldorf, to put it on the hotel's menu at once.
